Creamy Baked Oatmeal

 1 cup quick Oats (gf)
  cup slivered Almonds
 1 large pear or apple (pear will be much creamier and is highly suggested!)
 1 tsp cinnamon
 ¼ tsp sea salt
 1 ¼ tsp baking Powder (gf) (Recommended Brand: Purest)
 2 ⅓ cups unsweetened almond milk
 1 tsp pure vanilla extract
 ½ tsp almond extract
 ¼ cup honey
 1 organic egg

Preheat oven to 375 C and grease a 9 x 9 baking dish.

In a large bowl, mix together oats, almonds, cinnamon, salt and baking powder.

Add the almond milk, extracts, honey and egg. Mix well.

Slice the pear/apple by cutting in half lengthwise, removing the core and cutting into thin slices (as shown in above photo). Set aside. Dice any remaining pear/apple pieces into cubes and add into mixing bowl.

Pour the oatmeal mixture into the prepared baking dish and place pear/apple slices in rows, layering them slightly over one another.

Place baking dish in oven. Bake for 50-60 minutes, or until oatmeal is golden and crisped around the edges.

Once cooked, let baked oatmeal stand for 7-10 minutes to set before serving.
