Pre heat oven to 350 degrees C and grease a 9 x 9 pan for thicker bars, or 9 x 12 for thinner bars (both are great).
In a mixing bowl, start by mashing the bananas.
Add almond butter, vanilla extract, sweetener of choice (optional to add eggs) and mix together
Add the dry ingredients starting with the oats and cinnamon. Mix together and fold in the chocolate chunks.
Pour batter into pan and place in oven for 12-17 minutes.
Store in air tight container on countertop for up to 3 days. They will become more moist overnight!
